After Eight Meringues

This is the second baking session with the after eight pieces, the first being the cookies. This time round chocolate meringues with crushed after eight mcflurry pieces in the mixture.

I never even dreamed of making meringues with with after eights until today. My other half was making burgers and asked me if i want his left over egg whites for meringues. I agreed but got to thinking, been there done that so typed in leftover egg whites into google (darn i love google!) Eventually something caught my eye, meringue cookies. Basically meringues with pecans or other nuts and dried fruits mixed into it. Then reading comments on recipes i found people using chocolate chips. Bingo, light bulb flash moment, instead of chocolate chips, i could use the after eight pieces.

I was going to leave them plain but they needed something, a little bite. So out with the after eights yet again. I melted them then dipped the meringue bottoms in the chocolate and to finish off s=drizzled more of the chocolate over the top. Done!
