Crisp and fluffy roast potatoes cooked in bacon oil and topped with crispy fried bacon bits.
Today I got a little crazy with bacon! I fancied making a roast dinner, a tradition in the UK for a Sunday but I just make it when I feel like it. I always make roast chicken but I am sure my husband is probably getting bored of the same old roast dinner each time so I decided to change things up a bit today.
First I wrapped the chicken legs in some bacon, I was cooking a whole chicken but left the breast bare with just a little seasoning as I can't eat bacon myself. I then I 8 rashers left so decided to make bacon potatoes. After that I still had loads left so made my dad a bacon sandwich!
Steps for making bacon oil.
1. Simply fry some diced bacon until crisp, set aside in a bowl for later.
2. De glaze the frying pan with some oil, using a spatula to scrape off all the flavoured little bits stuck to the pan and use that to coat your poatoes before they go in the oven.
3. Cook as usual (or see photo below for my chip/roast potato recipe)
4. Once cooked, sprinkle the potatoes with the crispy bacon and serve.
So crisp and so golden compared to the potatoes I roasted with normal vegetable oil.
