Chocolate Chip + Cashew Nut Cookies by claremanson Chocolate Chip + Cashew Nut Cookies by claremanson
The fiance bought some cashews home the other day for me to bake him something, i ended up making him help me make them seeing they are for him anyway and i have been busy with other things this morning.

RECIPE
Makes 12

175g (7oz) plain/all purpise/gluten free flour
140g (5oz) caster or regular sugar
125g (41-2oz) butter
70g chopped cashew nuts
70g chocolate chips
1 egg

1. Pre-heat oven to 180oC
2. Cream together butter and sugar
3. Beat egg and stir into the butter and sugar.
4. Stir in the flour.
5. Stir in the chocoalte and nuts
6. Spoon onto trays (4 per tray as they spread out a lot!)
7. Bake for 10-12 minutes.
8. Cool slightly on tray them transfer to cooling rack.
9. Clean tray and bake the next batch.

VARIATIONS
Instead of using nuts you could try dried fruits such as cranberries, or replace entirely with more chocolate.

Mmm these look so yummy! Definitely going in my cookbook! (I'm building a cookbook for school and searching for recipes and yours are great ones for this! Hope that's okay, its for my personal use so no worries about me trying to do anything other then eat the cookies made with the recipe XD)

yay i am so glad you liked them, i too find it hard to find a god recipe so i am so happy i finally found one, funny thing is, it was under my nose all along in a cookie recipe book i was given years ago.

Cookies are always a winner! =D Although, I don't think I've ever had cashew nuts in anything. I do like nuts and chocolate. Also fruit and nut too!

these were with normal flour so couldn;t get to try them but everyone else liked them and the cookie was a proper soft and chewy cookie, being looking for a good year for a cookie recipe that does that! turns out i had it all the time in sarahs recipe book!

OMG! Really?! I've been after such a recipe too! It was so hard to find a recipe that did that, that I gave up on looking. I must also remember this for when I feel the urge to make cookies! Thanks! :hug:
