I love to do creative and fancy baking but i equally love simple and quick home baking too.

Chocolate sponge cake with whipped cream filling and topped with the new Cadbury Philadelphia and a sprinkling of grated white chocolate, a good hearty, naughty, tasty cake, simple but satisfying :)

As always the weather is rubbish so today i had to use the flash, making the cake not as yummy looking as it actually is, the photo makes the sponge look a little dry, it's not.

I used the recipe i always use when making a simple cake or cupcakes

I'm not sure on it and I haven't even tried it. :XD: I think I shall stick to making my own toppings. Still, I guess it was worth a try. Just seems like a very strange combination.

I bet it did...:)...I keep forgetting how nice cream and jam is in victoria sponges. I'm going to have to do one now!.....well onece all the Hello kitty cakes gone...:aww:

i normally use butter cream and jam in my victoria sponges because i never had an electric hand mixer before but now i have that is on my list :)

Yes....a mixer certainly makes a load of difference :) I used to hand-mix the sponges because that's how it was done in my Grandmothers book....then one day got fed up, and just put it in the mixer!

i don't normaly eat what i bake other than my cheesecakes because of stomach problems and an eating disorder so my boyfriend eats the most of what i bake. Next week i will be baking something that the kids love but he doesn't so he can't steal it all! Also the rest of my family and friends get treats every time they visit, i love any excuse to bake :)
