Chocolate Pots by claremanson Chocolate Pots by claremanson
Rich chocolate pots made with After Eight pieces, topped with whipped cream and sprinkled with broken after eight pieces.

Even though they are after eight pieces they are not minty at all as they do not have the mint cream in them so is just plain dark chocolate.

RECIPE
Makes 3
100g dark chocolate (semi sweet)
150g double cream (heavy cream)
70g caster sugar
OPTIONAL: 1 egg white (this makes it more light and fluffy but I don't eat raw eggs so don't add it when this is for me)
ADDED EXTRAS
You could also add a few drops of flavouring like mint or orange if you wanted

1. Melt chocolate, leave to cool but not harden whilst you prepare the other ingredients
2. Whip together the cream and 50g of the sugar (or all of the sugar if not adding egg whites) until thick, then set aside.
3. OPTIONAL: With an electric mixer, whisk egg white to a soft peak. Add remaining sugar and continue whisking until stiff but not dry, set aside.
4. Fold the slightly cooled chocolate into cream and gently mix together with a spoon. Then beat in one tablespoon of 5. egg white before folding in the rest.
6. Once thoroughly mixed pour into ramekins and refrigerate for at least one hour
7. Serve with whipped cream, some biscuits, a sprinkling of icing sugar, whatever you fancy and enjoy.

Whenever you make this without using the egg, do you substitute it with anything or do you just completely omit the egg from the whole recipe?

I've always wondered: Isn't eating raw eggs unhealthy? They're always used in recipés like this one and these are so yummy!

if they are not fresh they can be very dangerous but there are lots of people who drink raw eggs, someone i used to know did it every day. Personally i am not a big fan of using raw eggs, since making this i now make it without the egg, I am a lot more happy to give it to my kids and eat it myself that way.

I know right, otherwise you always think "What if something happens?" when you eat it. And you have kids? So cute! I would love to become a mom and make such delicious stuff for my kids :D

:giggle: yes i have two daughters, they are a big part of the reason i took up baking, i wanted them to have fresh, homemade food without all the added nasties you get from shop bought treats.

oh yes, my fiance has had a few shop bought cup cakes and things since i started baking but really not not like them unless i personalize them by adding extra flavours or turning them into another dessert entirely.

I was just wondering is it possible to substitute the dark chocolate for caramel perhaps?
