A light, fluffy, moist vanilla gluten free sponge with a sweet and sticky strawberry jam glaze.
It's not very often I bake for myself but when I do I get very excited, even for something so easy and simple as this.
I get asked a lot what I do with all the foods I bake if I don't eat it, well, normally I bake for friends and family, any leftovers after that goes to my husbands work or gets used to make something else.
For this tray bake I used two loaf tins as I find the cake cooks more evenly in my funny oven compared to the usual square tins. Using loaf tins also helps you to cut the cake into more evenly sized and neat slices.
To make a shiny jam or marmalade glaze, simply add a good helping of jam to a pan and heat gently for a few minutes until smooth and glossy (the smell is divine!) then simply spread over your cake. As with a lot of gluten free cakes I make, I find it best served on the day of baking when it is still very moist due to the flour bled I use.
