Freshly picked mint from my kitchen window and a very naughty rich chocolate sponge with a sticky chocolate ganache and mint sprig.
I have been waiting for months for my mint seeds to grow, now they are finally big enough to start using. I have never used fresh mint in baking before as I can never really find it in the shops or the ones I do see do not look very healthy as they have been hanging around for days so this was a bit of an experiment. It was lovely but next time I will add more mint and maybe a little more sweetness by adding a mint butter cream topping instead of the ganache. That is the beauty of testing something new out, getting to make it again a different way which is what keeps baking fun and exciting for me.
