Gluten free honey and walnut cookies. So tasty with the sweetness of honey and crunchy, woodiness of the walnuts.
As mentioned back along, I was given a huge bag of random ingredients that I would not normally use from a family member for baking. One of those ingredients was walnuts. The first thing that came to mind was walnut cake but most of the recipes used coffee, I can not stand coffee so looked up cookies instead and found the recipe for these. I love honey and was intrigued by the idea of using oil instead of butter so just had to give it a try. I made a few adjustments to the original recipe so they look a little different from the linked website, I used gluten free flour, I also had to use normal sugar as I was out of brown, hence them being a lot more crumbly and pale than the original but still tasting amazing.
