Honeycomb Shards

Description

The other day :iconvampyratekitty: challenged me to make some Hokey Pokey aka Honeycomb. At first i was not sure because the last Nigella Lawsen recipe i tried failed so i did a little research of a few different honeycomb recipes before i started.

This is my second attempt at making honeycomb, the first one i took my eye for just for a second and i burned it. Also the recipe says to use none stick paper so i did but it still stuck like glue so if you make it grease the paper or foil first thoroughly else like me you will spend longer pealing off all the paper than actually making the honeycomb which only takes 5 minutes.

I used the recipe in the book Sweet Confections and it worked out pretty well. I just used parchment paper to line the cookie sheet and it came off just fine. The recipe says to dip it in chocolate though. I coat the top surface to reduce the number of sticky surfaces. For some reason, the bottom, doesn't get as sticky. Not complaining, though. *lol* It also produces a thicker batch that you have to smooth down.
