Gluten free Jam Crumble Slices
I am always looking for new treats to put in the kids lunchboxes so, this week I decided to go over some old recipes I haven't made for a while but know the kids loved for inspiration.
I had some coconut left from Chirstmas, jam and butter to use up so thought I would make the jam crumble tarts I made last year but with a twist! Turning them into crumble slices! Not only are they an easier shape for the kids to handle but also great to fit snugly into their lunchboxes.
I made the base double the thickness to give it more structure while the kids are running around with their lunchboxes in the playground! I baked them in two rectangular loaf tins. One I made jam for the kids and the other chocolate chip and cashew nut for the adults. Normally my husband hates coconut so I reduced the quantity for that slightly and as I expected the chocolate chips and cashew nuts are such strong flavours anyway he could hardly taste it. If however you really hate it that much you can take it out of the recipe completely as I did when I made it last year as a tart.
