Lemon Curd Cupcakeby *claremanson

I had some cupcake mix left over from National Cupcake Week last month so thought i would try out my new squeezy plastic piping bottles It has been something i have wanted to improve for a while as i have so far not had any luck piping what so ever but finally i have found something i can work with.

It is plain sponge injected with lemon curd then finished with lemon frosting. I don't normally use cake mixes but i am so busy at the moment with my Etsy store, the kids and other things that is all i have had time for.

I love how you've made the frosting look like a rose. Also, very clever how you've got that contrast with yellow on purple--It really makes it pop!
