I've made these before! They are so amazing! I could only eat a few before I decided to force the rest on some coworkers. My chocolate seized on me, though, and I couldn't save it, so I didn't bother dipping them..

This up and coming Valentines day will be the third year in a row that ive sent these as part of my Valentines day present to my partner,
Since he lives on the completely opposite side of North America its been hard to find something that lasts a couple weeks in the mailing system, but they have always gotten to him in perfect condition n.n

A package in my country is one long roll of Oreo's not the huge packets America has. it has about 15 cookies in it.  Since making this recipe I don't add as much cream cheese, I add it a bit at a time until I get a good texture for making the balls.

I have a question, how do you melt chocolate!? You see each time i melt chocolate i mess up! :cry:

the best way to not mess it up is on the stove over boiling water, make sure the bowl you use over the pan does not touch the water though as the chocolate will get too hot and burn. Also keep on stirring. Finally If it starts to slightly burn, this happens more with white chocolate with me just add a oil to the chocolate, stir thoroughly and that will bring it back to a nice smooth consistency.

i made them last year for valentines day, instead of covering them with melted chocoalte i coated them with cocoa powder and presented them in a small box with red wrapping inside.

So, anyway, I finished them, and the actual truffles were really tasty, but we just couldn't get the chocolate (aero) to melt correctly, and then we thought Nutella would work,but it didn't... What chocolate bar brand would be best to melt?

oh yes, Aeros are odd things because they are not proper solid chocolate, you need something plain and simple, a regular bar of solid chocolate, we have galaxy and dairy milk bars over here, not sure what you get there but i just normally buy a big bar of supermarkets own chocolate, it's cheaper and for baking with i don;t see a difference from using something too pricey.

very messy! i have yet to master the art of dunking! some people roll it around with a couple forks, others dunk it by putting cake pops sticks into the chocolate, other just drizzle the chocolate over the truffles, turn them once they are semi set and coat the other side (i have tried all three but still very messy, but i am a messy cook!)

i used a regular sized 2oog (sorry don't know the oz) of Philadelphia, you probably don't even need to use 1/2 tub, maybe even just a quarter, i have improved at making them a lot since this recipe
