A fluffy chocolate sponge cake with a peppermint flavoured white chocolate and holly Christmas sprinkles.

Cake baked in a loaf tin as well cupcakes and cookies have become a regular thing to cook with for me these days as they make the perfect size treats for my kids and husbands lunchboxes.

TIP: When flavouring melted chocolate with essences and extracts or colouring it, add a touch of vegtable oil if the chocolate starts to go grainy due to the added liquid to bring it back to a lovely smooth consistency again.

From holding a recent poll, it seems the majority of you are most interested in baking traditional food for your country/family or food you usually bake over Christmas rather than a set recipe.  Therefore I have decided that as long as it is relevant to Christmas in some way, shape or form in recipe, flavour or presentation it will be considered as an entry.
 
Rules and requirements:

You must include Christmas into your baking, decorating or surroundings in some shape or form else your entry will not be included.
If what you you usually make isn't very Christmasy looking or tasting then why not try to add some more Christmas into your food by adding Christmas sprinkles onto candy and cupcakes, flavours such as cinnamon or cranberry, themed cupcake cases, festive shaped cookies etc.
You entry must be new for Christmas 2013.
It must be homemade, not shop bought.

I will be participating in a pot luck over the Xmas holidays, and my kitchen area is questionable. But I still can make people faun over what I bring. Can I use the Duncan Heinz Double chocolate instead of Scratch? Adding semi sweet choc bits in the mix along with mint oil.

We don't get that brand in my country so I don't know if it's any good.  The best thing to do would be to have a practice bake, especially if adding semi sweet chocolate bits rather than melted chocolate as they can sink to the bottom of the pan and burn, to help stop this coat the chocolate in a little flour before adding to the mix to help the chocolate stick to the mix but even then it can sink depending on the mix.  It would also be a good idea to practice so you know just how much mint oil you will need.  Have fun.

Agreed! And whats more annoying is here in the UK, Christmas was all about the fruitcake while I was growing up, finally things are changing, there are so many Christmas cakes, pudding and mince pies I can look at!

Fruitcake is an abomination of dessert delicacies. A waste of baking supplies and dried fruits. People makes other Christmas delicacies that are a lot, lot better than fruitcake could ever be, so nobody have to eat fruitcake during Christmas time because nobody likes fruitcake.

Guess what my youngest daughter made at playschool today!!!! You guessed it! She only would eat the icing and marzipan on top! That really is saying something because Sasha loves her food like you would not believe!
