Pistachio and dark chocolate shortbread (+recipe)

Description

Crunchy pistachio shortbread dipped in dark chocolate and sprinkled with crushed pistachios.

Adapted from my chocolate chip shortbread recipe (see below for link) these crunchy shortbread are very earthy tasting biscuits, they are not very sweet which makes a very nice change.

RECIPE
Makes 20 small, around 12 medium shortbread cookies.

Ingredients

SHORTBREAD
150g (6oz) plain or gluten free flour
50g (2oz) sugar
100g (4oz) softened butter
50g chopped pistachios

TOPPING
100g dark chocolate, melted
20g finely chopped pistachios

Steps
1. Rub together butter, sugar and flour until a dough starts to form.
2. Mix in the pistachios.
3. Refrigerate for 20 minutes, 24 hours maximum.
4. Roll out and cut the shortbread, chill for another 20 minutes.
5. Preheat oven to 180oC and line two trays with greaseproof paper.
6. Place on the baking trays and bake for 10-15 minutes until slightly coloured.
7. Leave to cool on the trays for 10 minutes before trying to move the shortbread else it will crumble.
8. Once cool, dip in the cookies or spoon the chocolate on half of each shortbread, then sprinkle on a little pistachio.
9. On greaseproof paper leave the shortbread to set in the fridge for at least 30 minutes before serving/moving to a container.
10. Store in a air tight container, best eaten as soon as possible.

TIPS
1. You can make the dough in advance and freeze as a log or cut out for up to a month in the freezer, just remove the night before needed and refrigerate.

I'm glad you have the recipe under your lovely photo there ^^ makes me want to try and make some of these (although mine would end up star shaped as I don't think I have a heart shaped cookie cutter aha).
