Description
Moist and fluffy gluten free vanilla rainbow cupcakes, topped with a smooth vanilla butter cream and rainbow sprinkles.
It's the holidays so doing more crafts and baking with the kids or very quick bakes is a must this summer. Having the kids help mix the colours into the cake mixture and adding the sprinkles meant there was barely a crumb left between them after eating them! The bright colours and them helping to make food of any kind really helps them to want to eat their food a lot more.
As always I used my basic cake recipe for this, I just separated the mixture into 5 bowls and added food colouring paste (paste keeps it's colour while baking unlike the liquid stuff) before spooning dollops of the mixture into the cupcake liners.
