For Christmas i got the best tasting strawberry jam ever which i like to use in baking when ever i get the chance.

I am constantly making shortbread cookies so fancied a change. A few years ago my mother-in-law bought me a cookie recipe book, i thought it was about time i used it.

Coconut cookies with strawberry jam strawberry pinks, or as i better know them as thumbprint cookies.

i have them without coconut before too using a different recipe, they are yummy, i am not a huge fan of coconut but i wanted some goodness in them for the kiddies :)

OMG *A* THOSE LOOK SO DELCIOUS!! And I love how this picture was composed!! With the white plate and milk complimenting each other! Also, I love how you have a picture of the same cookies in the background! BRAVO! (now I'm hungry from seeing these!)

thank you, i took a long time photographing these, too long to care to admit too so i was rather stressed out by the end of it.
i was so pleased they turned out as yummy looking as the ones in the recipe and the best part, the kids loved them so i will be making some more today :)

oh yes and my kids are the same, we just can not resist sticky jammy things. the best thing is i used coconut as my other half doesn't like it so he will not be stealing the kids cookies this time!

i have made jam ones before without the coconut using my shortbread recipe, but i am so bored of using that now.plus i know carl does not like coconut mwhahaha so he can't steal them! one recipe, no no make that two recipes done from the 50 recipes in that book. the first one put me off using it for like 2 years because they were double chocolate and way too rich.

Something Carl doesn't like? =O I like coconut! =D I often get to eat coconut chocolates that get left behind in selection boxes because my mum can't stand it.
Recipes for chocolatey things can be a bit hit and mix, as everyone has different idea to the next person on how chocolate things should taste. I don't mind really rich chocolate things, but I can only eat it in small quantities.
