For Christmas i got the best tasting strawberry jam ever which i like to use in baking when ever i get the chance.

I am constantly making shortbread cookies so fancied a change. A few years ago my mother-in-law bought me a cookie recipe book, i thought it was about time i used it.

Coconut cookies with strawberry jam strawberry pinks, or as i better know them as thumbprint cookies.

I've made a few, my parents tell me off when I bake unless it's a special occasion, and most of the time I bake cakes for said occasions, so I never really get to make anything much anymore. I've made the marshmallow daisies, they turned out well, and the orange and lemon cookies, oh, and the mint ones with the white chocolate ganache!

Oh nice, i haven;t made any of those yet but i think the marshmallow daises i might have to give a go with the kids one day (if my youngest doesn't eat the ingredients first!)

So many people tell me their parents won't let them bake/bake very often, i find it such a shame, i would love for my kids to want to bake when they are older, it's fun and a lovely skill to have.

I think it's a shame, cause I've been baking since I could hold a spoon, it's only now when my parents and I go on holidays abroad that they tell me we're dieting, but that never falls through. I hope I'll always be good at baking :3

you can try winning them round with healither dessert options, yogurt instead of cream and chocolate, nuts and dried fruit instead of chocolate chips etc :)

oh they look yummy! i'm glad you like them too :) shredded coconut is the same thing as dessicated so thats the right stuff. I don't think i used any strawberry flavouring, i don't normally buy it, i only normally buy peppermint, vanilla and lemon as i am not a fan of the other flavourings you can get here. So instead i just used a good quality strawberry jam(jelly)

i'm not sure, have a nose through my gallery, if you find something interesting that dfoes not have a recipe for ask and i can tell you if it can be done in that time. Cookies and little cupcakes are the quickest things, i use this recipe for cupcake sponges [link] i don't know if you want to make more cookies but using that shortbread recipe you could make something like this [link] or this [link] i used ice cream in the last one but it made the cookies funny so you could made some sort of chocolate dip to stick shapes into maybe?

oh yes they wont take long at all, i think i used the shortbread cookie recipe for those then added a few drops of lemon flavouring but lemon zest is the normal thing to use but i only had flavouring in the house at the time. I also love lemon so refreshing, i really have to start using it more, i have only used it three times so far

Hooray, thank you, once again! :D I'm pretty pants at zesting, haha, so I might just cheat and use the flavouring! I love lemon in desserts too, and I genuinely can't wait to make these cookies! Maybe I'll make them a surprise for mothers day! :)

this is only the second recipe i have tired. the first was one of the gooey ones, a triple chocolate one a couple years ago, it was ever so strong it put me off that book until now
