Chocolate (gluten free) cupcake base, raspberry with cream cheese and whipped cream center, topped off with raspberries and strawberries and served with bite size (petit four cased) cupcakes of the same layering.
No recipe for this one, i kind of made up the middle layer as i went along. Originally it was going to be just raspberries a touch of sugar to take away the sharpness of the raspberries and cream cheese but it needed thickening so i whipped up some cream and added that to the mis (i taste tested along the way so added more sugar or more raspberries where needed)
Cupcake recipe in my gallery, mini cupcakes take 5-7 minutes to bake.
Make sure you was your fruit thoroughly and pat dry on some kitchen towel before use, you don;t want to find any dirt and/or flies in your dessert.
