7am on a Monday morning and the house was filled with the aroma of baking while some Stone Sour played in the background, what a wonderful way to start the week :)

After a week of not baking you may have noticed that's all i have wanted to do. I have baked and/or decorated so many things over the past few days it's crazy. Today i had some eggs and a banana to use up so decided to make something a little different from a normal banana cake and i have had enough of cupcakes for one week! So an upside down cake it was. I didn't have brown sugar to make the caramelized topping so used brown caster sugar instead so it's not so dark as a normal upside down cake but still tasted just as great on top the banana and gluten free sponge.

thank you, i have only been baking gluten free for 7 months now, i must say i am shocked how easy it is to replace normal flour with gluten free flour and not notice any taste difference in most of the things i have baked so far :)

Yes it did!I added cinnamon and ginger to the cakemixture and thought I might add some chocolate too but I forgot:P It was really tasty though :D

Baking for you seems to be like an art for me = if you're without it for a good while, you miss it so much that you just have to do it as you get the chance!
