Vanilla sponge with strawberry jam, butter cream and a sprinkling of icing sugar.

It's been a while since I last made a Victoria sponge so this was a nice change. It's my go to recipe when making cakes for people I don't know or know well enough to know their tastes as none of the flavours are too offensive or over powering, it is a simple all round cake and gets the job done. I even read yesterday it was the most bought cake here in the UK for 2012.

This cake I made with my kids, I am finally learning a way of baking to make everyone happy. I measured the ingredients, my eldest poured it all in the mixing bowl while my youngest mixed, then they both took turns mixing until ready.

My eldest Sarah especially wanted to help with this cake as it is a thank you cake for her teacher for doing an amazing job of taking care if her in school on Friday after a health scare, those who have read my recent journal will know why. Sarah even made him a lovely thank you card.

Back to the cake, it being so simple makes it very hard to find interesting ways of photographing it but I just loved that part of the cake with the jam oozing out ready for someone to come along with their finger to scoop it all up for a taste.

regardless it still looks good...
never heard of a victoria sponge so I was surprise to hear it's a very simple cake... you know it reminds me of your chocolate cookie picture, I don't recall which one though....

My secret is, most of what I bake is for family and friends so don't eat much of it at all, it's the idea, planning, making and photographing that i love.

I love the description!
I love it when you explain the story behind the image, and the tid bits of the history, and how you made it and then the image itself brought high upon a pedestal ^.^
Oh and th way you *ooh* love th part when you described the part of the cake that was photographed and why. It reminded me of when I used to bake and my younger siblings would come and convince me they use have a just a tad of the icing to approve my baking (if i shuld continue or not) ^^, And they still do that to this day as theyr teenagers and it just made me laugh and as I look at the focus of the image I am beamed with happiness because the image is well taken, the focus is well shot + explanation ..and *speechless*

aww thank you :hug: I'm glad someone appreciates them, i was beginning to wonder if anyone actually reads my descriptions as it does look like i ramble on a little sometimes by the length of them! I just love to know about photos, even food photos i get sad when i see lovely photos but with no description, i love to find out the process behind everything.
