Vanilla sponge with strawberry jam, butter cream and a sprinkling of icing sugar.
It's been a while since I last made a Victoria sponge so this was a nice change. It's my go to recipe when making cakes for people I don't know or know well enough to know their tastes as none of the flavours are too offensive or over powering, it is a simple all round cake and gets the job done. I even read yesterday it was the most bought cake here in the UK for 2012.
This cake I made with my kids, I am finally learning a way of baking to make everyone happy. I measured the ingredients, my eldest poured it all in the mixing bowl while my youngest mixed, then they both took turns mixing until ready.
My eldest Sarah especially wanted to help with this cake as it is a thank you cake for her teacher for doing an amazing job of taking care if her in school on Friday after a health scare, those who have read my recent journal will know why. Sarah even made him a lovely thank you card.
Back to the cake, it being so simple makes it very hard to find interesting ways of photographing it but I just loved that part of the cake with the jam oozing out ready for someone to come along with their finger to scoop it all up for a taste.
